Warm Kale Salad with Potatoes

I love incorporating warm, comforting ingredients to salads in Autumn when it’s cool outside. One of my favorite comfort foods of all time is potatoes. In this salad, I combine massaged red kale with warm red potatoes and crunchy pumpkin seeds. This would make the perfect healthy side dish for the holiday season. Another great thing about this salad is that it keeps well in the fridge because kale does not wilt like other greens. I like to make a large batch and keep leftovers in the fridge for the next few days – I find it tastes even better the day after making it! I hope you enjoy this recipe!

Delicious Warm Kale Salad

Serves 2

¾ pound red potatoes, about 6 small, quartered

1 bunch curly kale, chopped

¼ cup parsley leaves, chopped

1 Tablespoon pumpkin seeds

Dressing:

Juice from 1/2 lemon

2 Tbsp olive oil

1/2 tsp Himalayan salt

Freshly ground pepper to taste

COOK THE POTATOES

Place the potatoes in a medium saucepan and cover with cold water. Add 1 tablespoon of salt to the water and bring to a boil over medium heat. Cook the potatoes until tender, about 15 minutes. Drain and put the potatoes in a serving bowl.

PREPARE THE SALAD

Add the chopped kale and dressing ingredients to a large salad bowl and massage well, until the kale is soft. While the potatoes are still warm, add them to the salad bowl. Top salad with pumpkin seeds, chopped parsley, and freshly ground pepper. Serve.
