Chia Seed Pudding | Easy Healthy Breakfast Idea

When it comes to breakfast, I always choose meals that are simple and quick to prepare. Chia seed pudding is one of my go-to breakfast choices because it’s super simple and can be customized depending on what type of mood you’re in (Sweet? Add a sliced banana! Spicy? Add some cinnamon!). Chia seeds are considered a superfood because they are packed full of fiber, calcium, iron, & are an excellent choice to eat when beginning your day.

Here are two of my current favorite combinations that are perfect for fall:

(side note – who else can’t wait for fall?! Bring on the boots, scarves, & pumpkin everything!)

Warm Cinnamon Protein Pudding 

3 tablespoons chia seeds

1 cup milk (I prefer a dairy free milk, such as almond or cashew)

2 tablespoons vanilla protein powder

Dash cinnamon

1 mashed banana

1 tablespoon shredded coconut

1-2 drops stevia (optional)

 

ASSEMBLE THE NIGHT BEFORE. The night before you want the chia pudding for breakfast, place chia seeds, milk of choice, protein powder, banana, coconut, and cinnamon in a Mason jar or other sealable container, shake well and let it sit overnight in the refrigerator.

THE NEXT MORNING. Pour mixture into a saucepan and warm on low heat (this can also be enjoyed cold).

SERVING SUGGESTION. Add stevia or maple syrup (if desired) and top with toppings of your choice. (Topping examples: sliced banana, walnuts, coconut, berries, goji berries, hemp seeds, pumpkin seeds)

 

Apple Spice Chia Pudding

3 tablespoons chia seeds

1 cup milk (I prefer a dairy free milk, such as almond or cashew)

¼ cup applesauce

½ teaspoon vanilla extract

Dash of nutmeg

1/2 tsp of cinnamon

1-2 drops stevia (optional)

Optional Toppings: same as above

ASSEMBLE THE NIGHT BEFORE. The night before you want the chia pudding for breakfast, place chia seeds, milk, applesauce, vanilla, nutmeg and cinnamon in a container with a lid, shake well and let it sit overnight in the refrigerator.

THE NEXT MORNING. Eat the pudding cold or warm on the stove as above if desired.
